Feta, Tomato, & Green Leaf Muffins

A tasty and healthy savory treat that makes the perfect snack. My sister approached me about making savory muffins for her. This is the result. It’s so good, I can’t eat just one.

The Greek Seasoning featured in this recipe is a spice blend that I created using organic and sustainably harvested herbs. The Greek Blend is available for purchase at my Etsy Shop. If you don’t have this blend, no worries, it will still be super delish with the substitution found in the recipe below.

Feta, Tomato, and Green Leaf Muffin

A tasty and healthy savory treat that makes the perfect snack!

Ingredients

  • 2 eggs
  • 1/3 cup cottage cheese
  • 1/3 cup nettle infused oil (or olive oil)
  • 1/2 cup heavy whipping cream
  • 4 – 5 ounce feta cheese
  • 1 and 1/2 cup flour
  • 1 tablespoon Greek seasoning (or 1 and 1/2 teaspoons each of oregano and basil, dried)
  • 1 and 1/2 teaspoon baking powder
  • 1/2 teaspoon lemon zest
  • 1/4 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon pepper
  • 1 and 1/2 cup chopped fresh spinach, nettle, arugula, or kale (or any other favorite green leaf of yours)
  • 1/2 cup chopped roma tomato

Directions

  1. Preheat oven to 350 degrees. Prepare a muffin pan by greasing with oil.
  2. Beat eggs. Add cottage cheese, oil, and cream. Stir until combined.
  3. Add the crumbled feta. Stir into mixture.
  4. Next add the flour, baking powder, salt, pepper, garlic powder, and Greek seasoning. Mix until well combined.
  5. Add the tomatoes and your greens. Fold into the mixture until well incorporated.
  6. Add batter to the prepared muffin pan. Bake for 25-30 minutes.
